Oligomeric isomaltose (IMO) is also known as isomalto-oligosaccharide, isomalto-oligosaccharide, branched oligosaccharide, etc. The industry standard of light industry in China is designated as oligomeric isomaltose. It is a kind of starch sugar, and the main component is isomaltose, pannose, isomaltotriose and tetrasaccharide or more oligosaccharides combined with α-1 ,6 glycosidic bond between glucose molecules. Scholars at home and abroad differ slightly on the types of sugars contained in oligomeric isomaltose (IMO). However, scholars at home and abroad generally agree that it must include isomaltose, pansaccharide and isomaltotriose, which are the main components reflecting the functionality of IMO, and its content reflects the quality of the product, and also affects the price and application prospect of the product.

Oligomeric isomaltose is found in nature as a component of branched chain starch or polysaccharide. It is only present in small amounts in some fermented foods such as soy sauce and yellow wine. Because it can promote the proliferation of bifidobacteria in human body, has the function of water-soluble dietary fiber, low caloric value, anti-caries and other characteristics, so it is a kind of widely used functional oligosaccharide, and the main products of isomalto-oligosaccharide in the market are such intestinal health products as Liken.

3.1 Oligomeric isomaltose can promote the proliferation of bifidobacteria in the intestine, inhibit the formation of harmful intestinal bacteria and spoilage substances, increase vitamin content, and improve the immunity of the body. 4.4 Moisturizing property

Oligomeric isomaltooligosaccharide has moisturizing property, so that water is not easy to evaporate, and it has good effect on moisturizing and maintaining the quality of various foods, and it can inhibit the formation of crystals of sucrose and glucose. Bread, sweet snacks and other starch-based foods often harden when stored slightly, and the addition of oligomeric isomaltose can prevent starch aging and extend the shelf life of foods.
