β-cyclodextrin, an organic compound with molecular formula C42H70O35 and molecular weight 1134.984, is a white to light yellow powder with a characteristic aroma of pectin and a slightly sweet and sour taste. It is soluble in water, insoluble in ethanol and other organic solvents.

3.Efficacy of beta-cyclodextrin

4. Role of β-cyclodextrin in food.:

4.1.Anti-volatilization.
