Calcium oxide is an inorganic compound, the chemical formula is CaO, commonly known as quicklime. Its physical properties are white powder on the surface, off-white if impure, yellowish or gray when containing impurities, and hygroscopic.
Calcium oxide is an alkaline oxide, sensitive to moisture. It readily absorbs carbon dioxide and moisture from the air. It reacts with water to produce calcium hydroxide (Ca(OH)2) and generates a lot of heat, which is corrosive.


According to the Food Additive Hygiene Standard (GB 2760-2007), calcium oxide is a permitted processing aid and can be used in food processing according to production needs. Lime meets water to generate calcium hydroxide (also called slaked lime, slaked lime), quick lime will emit a lot of heat when it meets water, so there are some quick food products in supermarkets that use quick lime to heat.
