Sodium bicarbonate, chemical formula NaHCO3, commonly known as baking soda. It is a fine white crystal, less soluble in water than sodium carbonate. It is also an industrial chemical and begins to decompose gradually above 50°C as a solid to produce sodium carbonate, carbon dioxide, and water, with complete decomposition at 270°C.Sodium bicarbonate is an acid salt produced by the neutralization of a strong base with a weak acid, and appears weakly alkaline when dissolved in water. This property allows it to be used as a bulking agent in the food preparation process. Sodium bicarbonate will leave residual sodium carbonate after action, and excessive use will cause the finished product to have an alkaline taste.

1.Laboratory use
Sodium bicarbonate can be used as an analytical reagent, and also used in inorganic synthesis. It can be used to prepare sodium carbonate-sodium bicarbonate buffer solution, which can keep the hydrogen ion concentration from changing significantly when adding a small amount of acid or base, and can keep the pH of the system relatively stable.
2.industrial use
Sodium bicarbonate can be used in the production of acid and alkali fire extinguishers and foam fire extinguishers, and in the rubber industry, sodium bicarbonate can be used in the production of rubber and sponge. In metallurgical industry, sodium bicarbonate can be used as flux for casting steel ingots. In the machinery industry, sodium bicarbonate can be used as a molding aid for casting steel (turning sand) sand. In printing and dyeing industry, sodium bicarbonate can be used as color fixing agent for dyeing and printing, acid and alkali buffering agent, and post-treatment agent for fabric dyeing and finishing; adding baking soda in dyeing can prevent yarn cylinder from producing color flowers, and it can also be used as detergent for wool.
3.Food processing use
In food processing, sodium bicarbonate is one of the most widely used relaxing agents, used in the production of cookies, bread, etc., but the role of residual sodium carbonate, the use of too much will make the food alkali too much and lead to poor flavor, yellowish brown color. It is the generator of carbon dioxide in drinks; it can be compounded with alum as alkaline baking powder, and also with soda ash as civil rock soda; it can also be used as butter preservative. It can be used as fruit and vegetable color protector in vegetable processing. When washing fruits and vegetables add about 0.1%~0.2% of sodium bicarbonate can make the green color stable. Sodium bicarbonate used as fruit and vegetable treatment agent, through the fruits and vegetables cooking bleaching, can make the pH value of fruits and vegetables rise, protein water-holding increase, promote the softening of food tissue cells, so that astringent components dissolved. In addition, it has the effect of de-staining sheep's milk, the use amount is 0.001%~0.002%.
4.Agricultural and animal husbandry use
Sodium bicarbonate can be used for agricultural seed dipping, and it can also make up for the lack of lysine content in feed. Dissolving sodium bicarbonate in a small amount of water or mixing it into the concentrate to feed cattle (adding it in appropriate amount) can promote the growth of cattle, and can also obviously improve the milk production of cows.
5.Medical use
Sodium bicarbonate can be used as a raw material for pharmaceuticals, used to treat hyperacidity and metabolic acidosis, also can alkalize urine to prevent uric acid kidney stones. It can also reduce the nephrotoxicity of sulfonamides and prevent the deposition of hemoglobin in the renal tubules during acute hemolysis, and treat the symptoms caused by hyperacidity; intravenous drip has non-specific therapeutic effect on the poisoning of barbiturates, salicylic acid drugs and methanol and other drugs. However, it is prohibited for gastric lavage in case of strong acid poisoning by swallowing, and cardiac arrhythmia, muscle spasm, pain, abnormal fatigue and weakness, slowed breathing, bad taste in the mouth, frequent urination, urgent urination, persistent headache, loss of appetite, nausea, vomiting, etc. may occur when injected in large quantities, in the presence of renal insufficiency or when applied for a long time
1. Used as analytical reagent, also used in inorganic synthesis and pharmaceutical industry.
2.Used in the treatment of acidemia. Antacid agent.
3. Used as fermenting agent in food industry, used as carbon dioxide generating agent in soft drinks and cold drinks, used as preservative of butter. It can be directly used as raw material in pharmaceutical industry.
4. Used in film production, leather tanning, mineral processing, smelting, metal heat treatment, fiber, rubber and agricultural seed soaking, etc.
5. Used as wool detergent, foam fire extinguishing agent, bathing agent, etc.
6. Alkaline agent: bulking agent. It is usually formulated with ammonium bicarbonate as a bulking agent for cookies and cakes. The addition amount in wheat flour is 20g./kg.
7,As acidity regulator and chemical bulking agent, it can be used for various foods that need bulking agent according to production needs.
8,Carbon base balancing agent for injection. It is used in food, medicine, cinema film, leather tanning, mineral processing, metallurgy, fiber, rubber and other industries. It can also be detergent and fire extinguishing agent.
