Glycine (Gly), also known as aminoacetic acid, is a non-essential amino acid with the chemical formula C2H5NO2. Glycine is a constituent amino acid of the endogenous antioxidant reduced glutathione, which is often supplemented exogenously when the body is under severe stress and is sometimes referred to as a semi-essential amino acid. Glycine is one of the simplest amino acids.
Glycine in solid form is a white to off-white crystalline powder, odorless and non-toxic. It is easily soluble in water and almost insoluble in ethanol or ether. It has both acidic and basic functional groups in the molecule, and can be ionized in water, with strong hydrophilicity. Glycine can take different molecular forms by adjusting the acidity and alkalinity of aqueous solution
Glycine is the simplest amino acid among the 20 members of the amino acid series, also known as aminoacetic acid, which is a non-essential amino acid in human body. The adjustment of acidity and alkalinity of aqueous solution can make glycine show different molecular forms. The side bond of glycine is a hydrogen atom. Glycine is not rotationally isomeric due to its alpha carbon and one hydrogen atom. Since the side bond of glycine is very small, it can occupy spaces that other amino acids cannot, for example, as an amino acid within the collagen helix. It is white crystal or light yellow crystalline powder at room temperature. It has a unique sweet taste, which can moderate acid and alkaline flavors, mask the bitterness and enhance the sweetness of added saccharin in food
