It loses water of crystallization at 150ºC, and decomposes when continued heating. Soluble in water, pH of aqueous solution is about 8, insoluble in ethanol.

Sodium citrate is the most important citrate, mainly produced by fermentation of starchy substances to generate citric acid, and then neutralized with alkali substances and produced, has a variety of unique excellent properties.
